1 1/2 cups all purpose flour
1 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
3/4 cup packed light brown sugar
1/2 cup (1 stick) butter, softened
1/2 cup chunky peanut butter
1 egg
1 1/2 cup butterscotch chips
1 cup chopped dried apples
1 cup melted caramels
1/2 cup chopped peanuts
1. Preheat oven at 350F. Stir together the flour, baking soda, baking powder and salt in a large bowl.
2. Beat the brown sugar, butter, and peanut butter in a large bowl with an electric mixer at medium speed until fluffy. Beat in the egg until well blended. Gradually add the flour mixture; beat until well blended.
3. Stir in butterscotch chips and dried apples. Drop the dough by rounded teaspoonfuls 2 inches apart onto ungreased cookie sheets.
4. Bake for 8-10 minutes or until the edges are lightly browned. Cool the cookies on the cookie sheet for 2 minutes. Transfer to wire racks and cool completely.
5. Spread about 1 teaspoon melted caramels onto each cookie. Sprinkle with the chopped peanuts.
